There is a NY Times recipe that keeps popping up on my Facebook newsfeed. Although I do have a subscription to the Times, I don't pay extra for their premium recipes. Their Cheesy White Bean-Tomato Bake is one of those recipes.
In desperation, I Googled it thinking I could find something similar. I found this recipe at The Endless Meal that is based on the NY Times version. Perfect.
Kristen at The Endless Meal added spinach and more cheese - which I probably would have done, myself. I veganized it, of course, with vegan cheese but that is the only substitution I made.
It's really good. I had it with some sourdough bread and a salad. It is very filling! I'll be making this meal again.
